How are you with Valentine’s Day?

I love it. I make cards for my family members and treat myself to candles and chocolate that I love. I haven’t lit the candles yet, but the chocolates are already gone— I must ask someone to hide them next time…although that never works since I always “forget” to ask…

In case you like to bake and perhaps combine Valentines with Random Acts of Kindness Week (thanks for reminding me about the timing of this Ardelle) – you could consider baking the cookies from the following recipe and gifting them to neighbours and friends…or perhaps inviting someone who could be feeling lonely by for a cup of tea with your lovely cookies….Anytime I have done that I always realize what a gift it is for me—the stories, the laughter, the connection.

Vanilla Cookies

This is basically the Danish recipe that is used at Christmas time to squeeze through a meat grinder and make into rings.

  • 500 grams flour
  • 375 grams room temperature butter
  • 250 grams sugar
  • 165 grams finely chopped almonds, I left the skins on
  • 1 egg (beaten with a fork, separately, then add)
  • instead of 2 vanilla beans (which I used at Christmas, I added 1 teaspoon Pure Madagascar Vanilla Bean Paste

Mix butter and sugar, add egg and paste, then flour and almonds.

Roll into a long sausage shape, Cover in waxed cloth or thin plastic wrap.

Place in the fridge for an hour (or so).

The original recipe instructs a 200″F oven for 5-15 minutes when making the rings, I did 350″F until lightly brown.
