Our family likes to make crepes (with spelt instead of flour).

4 large organic  eggs, 1 cup spelt, 1 cup skim milk, 1/2 teaspoon salt, 2 tablespoons melted butter. Place all ingredients into a blender, blend for 30 seconds, scrape down sides. You could let it sit covered for an hour, but we never do. Makes 12 -15 crepes. We place them on a plate covered with a clean dishtowel until it’s time to serve and that keeps them warm without having to have the oven door open and close (more of a problem to avoid when the children were little). Favorite fillings: nutella and banana, peanut butter and banana, squeezed lemon and a sprinkle of icing sugar, cooked berries or warm apple sauce and vanilla yogurt.

Here is our table last weekend as we enjoyed them together. I love lazy mornings together– they are so rare– so it seems like a simple celebration enhanced as always by candlelight.
